How to Make Garri in a Garri Processing Plant in Nigeria

Garri processing plants are widespread in Nigeria. Historically, these plants relied on traditional methods and manual labor to produce garri. Some small workshops still use manual labor, while others employ basic machinery like grinders and jack presses. However, due to the time-consuming and labor-intensive nature of traditional methods, which significantly reduce operational efficiency, most garri processing plants now opt for mechanized processes.
Depending on the investment cost and scale, garri processing plants in Nigeria can be categorized into small-scale, medium-scale, and large-scale operations. Each type employs different production methods:

Small-Scale Garri Processing Plants
Small-scale garri processing plants typically combine manual labor with basic machinery. The production process begins with manual cleaning of cassava tubers. A cassava peeling machine is then used to remove impurities and the outer skin. Next, a grinding machine crushes the cassava into pulp. This pulp is left to ferment for two to three days. After fermentation, a jack press is used to dehydrate the pulp, followed by frying in a garri fryer. Due to the significant manual involvement, these plants have low costs but also limited production efficiency.

Medium-Scale Garri Processing Plants

Medium-scale garri processing plants feature a complete mechanized production line. Machines handle the entire process: a dry sieve and paddle washing machine clean the cassava, a cassava peeling machine removes the skin, a grinding machine turns the cleaned cassava into pulp, a hydraulic press dehydrates the fermented pulp, and a garri fryer completes the process. Only a small workforce is needed to operate and maintain the machinery. These plants can produce approximately 1–5 tons of garri per day.

Large-Scale Garri Processing Plants

Large-scale garri processing plants utilize fully automated production lines. From raw cassava feeding to final packaging, all operations are machine-driven. For example, Doing Holdings - Henan Jinrui’s fully automated line includes machines like a dry sieve, paddle washing machine, and cassava peeling machine for cleaning; a grinding machine, hydraulic press, and garri fryer for processing; and a vibration sieve and packaging machines for the final stages. Conveyor belts ensure continuous operation. The entire process is controlled by an automated system. Operators simply need to manage the computer, set up the system, and monitor the production line via a screen. This approach not only boosts output and efficiency but also enhances the quality of the garri.
